  • 2 cups of cooked white rice
  • 1 pound of boneless, skinless chicken thighs
  • 1/2 cup of honey
  • 1/2 cup of BBQ sauce (your favorite brand)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1/2 teaspoon of smoked paprika
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Sesame seeds for garnish (optional)

Instructions

  1. In a medium-sized bowl, combine honey, BBQ sauce, soy sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Whisk until well blended.
  2. Place chicken thighs in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish with plastic wrap.
  3. Let the chicken marinate in the refrigerator for at least 30 minutes, preferably 2 hours or overnight for maximum flavor.
  4. Preheat your grill or grill pan over medium-high heat. Oil the grates if using a grill.
  5. Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the leftover marinade.
  6. Place chicken thighs on the grill. Cook for about 6-7 minutes on one side without moving them.
  7. Flip the chicken and cook for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C). Cover with a lid if using a grill pan.
  8. Remove the chicken from the grill and let it rest for about 5 minutes.
  9. If you haven’t cooked the rice yet, rinse 1 cup of white rice under cold water until the water runs clear.
  10. In a medium saucepan, combine rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil over high heat.
  11. Once boiling, reduce heat to low, cover, and let simmer for about 18-20 minutes, or until all water is absorbed. Remove from heat and let sit, covered, for another 5 minutes. Fluff with a fork.
  12. Slice the grilled chicken thighs into strips or bite-sized pieces.
  13. In a large serving bowl or individual plates, add a generous scoop of cooked rice as the base.
  14. Top the rice with sliced honey BBQ chicken, arranging nicely.
  15. Sprinkle chopped green onions over the top and add sesame seeds if desired.
  16. Serve immediately while warm, with extra BBQ sauce on the side if preferred.

  • For added veggies, sauté bell peppers, onions, or broccoli in olive oil and season with salt and pepper. Mix into the rice or serve on the side.
