- 2 pounds baby potatoes, halved
- 6 slices of bacon, chopped
- 1/4 cup honey
- 3 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the baby potatoes thoroughly under cold water to remove any dirt. Cut the potatoes in half, quartering larger ones for even cooking.
- In a large skillet over medium heat, add the chopped bacon and cook until crispy, about 5-7 minutes. Stir occasionally.
- Use a slotted spoon to transfer the crispy bacon to a paper towel-lined plate, leaving about 1 tablespoon of bacon fat in the skillet.
- In the same skillet, add honey, olive oil, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until well combined to create a sticky glaze.
- In a large mixing bowl, combine the halved potatoes and crispy bacon. Pour the honey glaze over the mixture and toss until well coated.
- Line a large baking sheet with parchment paper. Spread the coated potatoes and bacon in a single layer on the baking sheet.
- Roast in the preheated oven for about 25-30 minutes, tossing halfway through for even browning. If needed, roast for an additional 5 minutes until golden brown and crispy.
- Remove from the oven and let cool for a few minutes. Sprinkle with freshly chopped parsley before serving.
