  • 6 slices of bacon, chopped
  • 1/4 cup honey
  • 3 tablespoons olive oil
  • 2 tablespoons Dijon mustard

  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes thoroughly under cold water to remove any dirt. Cut the potatoes in half, quartering larger ones for even cooking.
  3. In a large skillet over medium heat, add the chopped bacon and cook until crispy, about 5-7 minutes. Stir occasionally.
  4. Use a slotted spoon to transfer the crispy bacon to a paper towel-lined plate, leaving about 1 tablespoon of bacon fat in the skillet.
  5. In the same skillet, add honey, olive oil, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until well combined to create a sticky glaze.
  6. In a large mixing bowl, combine the halved potatoes and crispy bacon. Pour the honey glaze over the mixture and toss until well coated.
  7. Line a large baking sheet with parchment paper. Spread the coated potatoes and bacon in a single layer on the baking sheet.
  8. Roast in the preheated oven for about 25-30 minutes, tossing halfway through for even browning. If needed, roast for an additional 5 minutes until golden brown and crispy.
