  • 1 large egg
  • 2 tablespoons melted butter
  • 1/4 cup maple syrup
  • 4 slices of cooked bacon
  • 4 large eggs
  • 4 slices of American cheese
  • Butter for cooking

Instructions

  1. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk them together until well mixed.
  2. In another bowl, whisk together the buttermilk, egg, and melted butter until smooth. Ensure the butter isn’t too hot to avoid cooking the egg.
  3. Pour the wet ingredients into the dry ingredients. Gently fold them together using a spatula until just combined. A few lumps are fine; do not overmix.
  4. Add the maple syrup to the batter and gently fold it in for that signature sweet flavor.
  5. Let the batter rest for about 10 minutes to activate the baking powder for fluffier pancakes.
  6. Preheat a non-stick skillet or griddle over medium heat, lightly greased with butter or cooking spray if desired.
  7. Using a 1/4 cup measuring cup, pour the batter onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
  8. Carefully flip the pancake and cook for another 1-2 minutes until golden brown. Repeat until all batter is used, yielding about 8 pancakes (4 sandwich buns).
  9. Place the pancakes on a wire rack to cool slightly, helping them stay fluffy.
  10. In a skillet, cook the bacon over medium heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain excess grease.
  11. In the same skillet, crack the eggs and cook sunny-side up or scrambled, until whites are set and yolks are runny, about 3-4 minutes for sunny-side up.
  12. Place a slice of American cheese on each egg and cover the skillet with a lid for about 1 minute to melt the cheese.
  13. Take one pancake bun and place it on a plate as the bottom of your sandwich.
  14. Layer on two slices of crispy bacon on top of the pancake bun.
  15. Carefully place the cheesy egg on top of the bacon, ensuring the cheese is melted.
  16. Top with another pancake bun to complete the sandwich.
