- 4 slices of cooked bacon
- 4 large eggs
- 4 slices of American cheese

Instructions
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk them together until well mixed.
- In another bowl, whisk together the buttermilk, egg, and melted butter until smooth. Ensure the butter isn’t too hot to avoid cooking the egg.
- Pour the wet ingredients into the dry ingredients. Gently fold them together using a spatula until just combined. A few lumps are fine; do not overmix.
- Add the maple syrup to the batter and gently fold it in for that signature sweet flavor.
- Let the batter rest for about 10 minutes to activate the baking powder for fluffier pancakes.
- Preheat a non-stick skillet or griddle over medium heat, lightly greased with butter or cooking spray if desired.
- Using a 1/4 cup measuring cup, pour the batter onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
- Carefully flip the pancake and cook for another 1-2 minutes until golden brown. Repeat until all batter is used, yielding about 8 pancakes (4 sandwich buns).
- Place the pancakes on a wire rack to cool slightly, helping them stay fluffy.
- In a skillet, cook the bacon over medium heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain excess grease.
- In the same skillet, crack the eggs and cook sunny-side up or scrambled, until whites are set and yolks are runny, about 3-4 minutes for sunny-side up.
- Place a slice of American cheese on each egg and cover the skillet with a lid for about 1 minute to melt the cheese.
- Take one pancake bun and place it on a plate as the bottom of your sandwich.
- Layer on two slices of crispy bacon on top of the pancake bun.
- Carefully place the cheesy egg on top of the bacon, ensuring the cheese is melted.
- Top with another pancake bun to complete the sandwich.
- For an extra touch, drizzle more maple syrup on top or serve it on the side for dipping.
- Repeat the assembly process for the remaining sandwiches.
