Ingredients

Scale
  • 1 cup small-curd cottage cheese
  • 2 large eggs
  • 1 tablespoon olive oil (optional)
  • 1 1/2 cups all-purpose flour (or a 50/50 blend of whole wheat flour and all-purpose flour for a nuttier flavor)
  • 1 tablespoon baking powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini beef pepperoni slices
  • 1/2 cup finely diced bell peppers
  • 1/2 cup chopped mushrooms
  • 1/4 cup chopped black olives
  • 1/4 cup chopped onions
  • 1/4 cup fresh spinach or basil (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a standard 12-cup muffin tin by greasing each cup with non-stick cooking spray or lining them with paper muffin liners.
  2. In a large mixing bowl, whisk together the cottage cheese, eggs, and olive oil until well combined, ensuring the cottage cheese curds are somewhat broken down.
  3. In a separate medium bowl, whisk together the flour, baking powder, Italian seasoning, garlic powder, salt, and black pepper.
  4. Pour the dry ingredient mixture into the wet ingredient mixture and gently fold until just combined, being careful not to overmix.
  5. Fold in the pizza sauce, shredded mozzarella cheese, and your chosen toppings until evenly distributed.
  6. Divide the batter evenly among the 12 prepared muffin cups, filling each cup about two-thirds to three-quarters full.
  7. Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the muffin tin from the oven and let the muffins cool in the tin for 5-10 minutes before transferring them to a wire rack to cool completely.
