  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes)

Instructions

  1. In a medium-sized bowl, combine the vegetable oil, soy sauce, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, ground coriander, ground cumin, turmeric powder, and red pepper flakes.
  2. Whisk the ingredients together until the brown sugar is fully dissolved and the marinade is well combined. The mixture should be fragrant and slightly thick.
  3. Taste the marinade and adjust the seasoning if necessary. If you prefer a sweeter marinade, add a little more brown sugar. For more heat, increase the amount of red pepper flakes.
  4. Cut the boneless, skinless chicken thighs into 1-inch cubes.
  5. Place the chicken pieces in a large resealable plastic bag or a shallow dish.
  6. Pour the marinade over the chicken, ensuring that all pieces are well coated.
  7. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 1 hour, but ideally, let it marinate for 4 to 6 hours.
  8. If you’re using wooden skewers, soak them in water for at least 30 minutes. If using metal skewers, skip this step.
  9. Once the chicken has marinated, remove it from the refrigerator.
  10. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
  11. Preheat your grill to medium-high heat.
  12. Lightly oil the grill grates to prevent sticking.
  13. Place the chicken skewers on the grill. Cook for about 5-7 minutes on one side.
  14. After 5-7 minutes, flip the skewers and cook for an additional 5-7 minutes on the other side until the chicken is cooked through (internal temperature of 165°F or 75°C).
  15. For extra char, leave the skewers on the grill for an extra minute or two, but avoid overcooking.
  16. Once done, remove the chicken skewers from the grill and let them rest for a few minutes.
  17. While resting, chop fresh cilantro for garnish.
  18. Serve the skewers on a platter, garnished with chopped cilantro and lime wedges on the side.
  19. In a small bowl, combine 1/4 cup of peanut butter, 2 tablespoons of soy sauce, 1 tablespoon of lime juice, 1 tablespoon of honey, and a splash of water to thin it out.
  20. Whisk until smooth and creamy. Adjust consistency with more water if needed.
  21. Taste and adjust flavors as desired.

Notes

  • For a spicier kick, increase the amount of red pepper flakes in the marinade.
  • These skewers can be served with rice or a fresh salad for a complete meal.
