  • Author: Maria
  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Description

Experience the luxurious taste of Gordon Ramsay-style fondant potatoes, featuring golden-brown, buttery potatoes infused with garlic and thyme. This elegant side dish is perfect for enhancing any meal with its rich flavors and beautiful presentation.

Ingredients

Scale
  • 4 large russet potatoes
  • 4 tablespoons unsalted butter
  • 2 tablespoons vegetable oil
  • 2 cups chicken or vegetable stock
  • 2 cloves garlic, crushed
  • 2 sprigs fresh thyme
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the russet potatoes and cut each into cylindrical shapes, about 2 inches tall and 1 inch wide.
  3. Place the cut potatoes in a bowl of cold water to remove excess starch and prevent browning.
  4. In a large, heavy-bottomed skillet, heat the vegetable oil over medium-high heat.
  5. Once the oil is shimmering, add the potatoes cut side down and sear for 5-7 minutes until golden brown.
  6. Flip the potatoes using tongs, add the unsalted butter, and baste the potatoes with the melted butter.
  7. Add the crushed garlic and fresh thyme to the skillet.
  8. Pour in the chicken or vegetable stock until it reaches halfway up the sides of the potatoes. Season with salt and pepper.
  9. Bring the stock to a gentle simmer, then transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until tender when pierced with a fork.
  10. Remove the skillet from the oven and let the potatoes sit for a few minutes to absorb the flavors.
  11. Transfer the fondant potatoes to a serving platter and drizzle with reduced stock.
  12. Garnish with fresh thyme leaves if desired.

Notes

  • Fondant potatoes pair well with roasted meats or a rich mushroom sauce for a vegetarian option.
  • Consider adding a side of sautéed greens or a fresh salad for a complete meal.
  • Experiment with different herbs or spices in the stock for a unique flavor profile.
