Instructions
- Preheat your oven to 400°F (200°C).
- Peel the russet potatoes and cut each into cylindrical shapes, about 2 inches tall and 1 inch wide.
- Place the cut potatoes in a bowl of cold water to remove excess starch and prevent browning.

- Pour in the chicken or vegetable stock until it reaches halfway up the sides of the potatoes. Season with salt and pepper.
- Bring the stock to a gentle simmer, then transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until tender when pierced with a fork.
- Remove the skillet from the oven and let the potatoes sit for a few minutes to absorb the flavors.
- Transfer the fondant potatoes to a serving platter and drizzle with reduced stock.
- Garnish with fresh thyme leaves if desired.
