Instructions

  1. Wash your zucchini thoroughly and trim off both ends. Slice the zucchini into half-inch thick rounds or crescent-shaped pieces.
  2. In a medium-sized bowl, combine the minced garlic, grated Parmesan cheese, olive oil, salt, and black pepper. Add red pepper flakes, oregano, or basil if desired, and stir until well combined.
  3. Add the sliced zucchini to the bowl and toss gently to coat each piece with the mixture. Let sit for 10-15 minutes if time allows.
  4. If using wooden skewers, soak them in water for at least 30 minutes. Thread the coated zucchini pieces onto the skewers, leaving a small amount of space between each piece.
  5. Preheat your outdoor grill to medium-high heat (around 400-450°F or 200-230°C) and clean the grill grates. Lightly oil the grates to prevent sticking.
