Description
Experience the creamy richness of ricotta cheese combined with vibrant spinach and aromatic garlic and herbs. This versatile dish is perfect as a filling, spread, or topping, making it a delightful addition to any meal.
Ingredients
Scale
- 1 cup of ricotta cheese
- 2 cups of fresh spinach
- 2–3 minced garlic cloves
- 1/4 cup of grated Parmesan cheese
- 1 tablespoon of chopped fresh basil
- 1 tablespoon of fresh parsley
- 1 teaspoon of dried oregano
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat about 1 tablespoon of olive oil over medium heat. Add 2 cups of fresh spinach and sauté until wilted, which takes about 2-3 minutes. Remove the spinach from the skillet and set aside to cool slightly.
- In the same skillet, add another tablespoon of olive oil and add 2-3 minced garlic cloves. Sauté for about 30 seconds until fragrant, being careful not to let it burn.
- In a mixing bowl, combine 1 cup of ricotta cheese, the sautéed garlic, and the wilted spinach (make sure to chop the spinach beforehand). Add 1/4 cup of grated Parmesan cheese, 1 tablespoon of chopped fresh basil, 1 tablespoon of fresh parsley, and 1 teaspoon of dried oregano.
- Season the ricotta and spinach mixture with salt and pepper to taste. Stir until everything is well combined.
- You can use this mixture as a filling for pasta, spread it on crostini, or serve it as a warm dip. If you’re making a pasta dish, toss it with cooked pasta and a little reserved pasta water to create a creamy sauce.
- For a lovely finish, drizzle a little extra olive oil on top and sprinkle with additional herbs or cheese before serving.
