Ingredients
- Ribeye or sirloin steak (or filet mignon)
- Unsalted butter
- Fresh garlic cloves
- Heavy cream
- Freshly grated Parmesan cheese

Instructions
- Take your steaks out of the refrigerator about 30 minutes before cooking to allow them to come to room temperature. Season generously with salt and pepper on both sides.
- In a large skillet, preferably cast iron, heat a tablespoon of oil over medium-high heat until it shimmers.
- Add the steak to the hot skillet and sear for about 3-4 minutes on each side for medium-rare, adjusting the time for your preferred doneness.
- In the last minute of cooking, add butter and minced garlic to the pan. Baste the steak with the melted garlic butter using a spoon.
- Once cooked, remove the steak from the skillet and let it rest on a cutting board for about 5-10 minutes.
- In the same skillet, lower the heat to medium. Add heavy cream and bring it to a simmer, scraping up any browned bits from the bottom of the pan. Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- After resting, slice the steak against the grain. Drizzle the Parmesan cream sauce over the slices or serve it on the side for dipping.
