  • 2 large sweet potatoes, peeled and diced into 1-inch cubes

  • 3 tbsp unsalted butter, melted

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp smoked paprika (optional)

  • 1 tbsp chopped fresh parsley (for garnish)


Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper if you like easy cleanup.

  • In a small saucepan over low heat, melt the butter with the minced garlic. Let it gently bubble for 1–2 minutes to infuse the butter with that garlicky goodness.

  • In a large bowl, toss the diced sweet potatoes with the garlic butter, olive oil, salt, pepper, and smoked paprika if using.

  • Spread the sweet potatoes out on the baking sheet in a single layer. Give them a little space so they roast instead of steam!

  • Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy at the edges.

 

  • Garnish with chopped fresh parsley before serving and enjoy while hot!

Notes

  • Cut the sweet potatoes evenly to make sure they roast at the same speed.

  • Don’t skip flipping halfway through—it gives you those perfect crispy bits on every side.

  • Smoked paprika is optional but adds a really nice smoky flavor boost.

  • You can also add a little Parmesan or chili flakes at the end for a flavor twist.
