2 large sweet potatoes, peeled and diced into 1-inch cubes

3 tbsp unsalted butter, melted

2 tbsp olive oil

3 cloves garlic, minced

1/2 tsp smoked paprika (optional)

1 tbsp chopped fresh parsley (for garnish)
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper if you like easy cleanup.

In a small saucepan over low heat, melt the butter with the minced garlic. Let it gently bubble for 1–2 minutes to infuse the butter with that garlicky goodness.

In a large bowl, toss the diced sweet potatoes with the garlic butter, olive oil, salt, pepper, and smoked paprika if using.

Spread the sweet potatoes out on the baking sheet in a single layer. Give them a little space so they roast instead of steam!
