Ingredients
- Fresh, skin-on salmon fillets
- Unsalted butter
- Fresh garlic
- Panko breadcrumbs
- Freshly grated Parmesan cheese
- Fresh parsley
- Salt
- Pepper
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly grease a baking dish with cooking spray or a little olive oil to prevent sticking.
- In a small saucepan over low heat, melt the unsalted butter. Once melted, add minced garlic and cook for about 1-2 minutes until fragrant. Remove from heat and set aside.
- Place the salmon fillets in the prepared baking dish. Brush generously with the garlic butter mixture. Season with salt and pepper to taste.
- In a mixing bowl, combine panko breadcrumbs, grated Parmesan cheese, chopped parsley, and a drizzle of olive oil. Mix until the breadcrumbs are well coated.
- Evenly distribute the panko mixture over each salmon fillet, pressing it down gently to adhere.
- Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The topping should be golden brown and crispy.
- Once done, remove from the oven and let it rest for a few minutes. Garnish with additional parsley if desired, and serve warm with your favorite sides.
