Instructions
- Clean the mushrooms using a damp paper towel to wipe off any dirt. Avoid rinsing under water to prevent sogginess. If needed, rinse quickly and dry thoroughly.
- Remove tough stems from the mushrooms. Leave button mushrooms whole; slice larger cremini mushrooms in half or quarters for even cooking.
- Set up three shallow bowls: In the first bowl, mix flour, garlic powder, onion powder, paprika, salt, and black pepper.
- In the second bowl, whisk the two large eggs until well combined.
- In the third bowl, add the breadcrumbs.
- Dip each cleaned mushroom into the flour mixture, coating evenly and shaking off excess.
- Next, dip the floured mushroom into the egg mixture, letting excess egg drip off.
- Finally, roll the mushroom in the breadcrumbs, pressing gently to ensure they stick. Place on a plate and repeat with remaining mushrooms.
- In a large skillet, pour enough vegetable oil to cover the bottom by about 1/4 inch. Heat over medium-high heat.
- Test the oil by dropping in a small piece of bread; if it sizzles, the oil is ready.
- Carefully add breaded mushrooms in batches, frying 6-8 at a time for 3-4 minutes on one side until golden brown.
- Flip and fry for another 2-3 minutes until crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.
- Sprinkle with extra salt while hot for enhanced flavor.
- Arrange on a platter, garnish with chopped parsley, and serve with lemon wedges for a zesty kick. Pair with dipping sauces like ranch, marinara, or spicy aioli.
