Ingredients
- Thinly sliced deli roast beef
- Large flour tortillas (about 10-12 inch)
- Sliced provolone cheese
- Sweet onions (yellow or Vidalia)
- Good quality low-sodium beef broth (3-4 cups)
- Worcestershire sauce (1-2 teaspoons)
- Soy sauce (about 1/2 teaspoon)
- Bay leaf
- Fresh thyme (optional)
- Butter or neutral oil (for sautéing)

Instructions
- Caramelize the Onions: Melt about 1 tablespoon of butter or heat oil in a large skillet over medium-low heat. Add thinly sliced sweet onions and stir to coat. Cook slowly, stirring occasionally, for 25-40 minutes, or until the onions are deeply golden brown, soft, and sweet. Season with a pinch of salt and pepper. Set aside.
- Prepare the Au Jus: In a small saucepan, combine 3-4 cups of beef broth, 1-2 teaspoons of Worcestershire sauce, a splash of soy sauce, a bay leaf, and a sprig of fresh thyme (if using). Bring to a gentle simmer over medium heat and let it cook for at least 15-20 minutes. Taste and adjust seasoning with salt and pepper as needed. Keep warm on very low heat until serving.
- Assemble the Rollups: Preheat your oven to 375°F (190°C) and lightly grease a baking dish. Lay a large flour tortilla flat on a clean surface. Layer 1-2 slices of provolone cheese over about two-thirds of the tortilla, leaving one edge clear. Evenly distribute a portion of the roast beef over the cheese. Spoon a generous amount of caramelized onions over the roast beef. Starting from the filled edge, roll the tortilla up tightly. Repeat with the remaining tortillas and filling ingredients.
- Bake the Rollups: Place the assembled rollups seam-side down in your prepared baking dish. Bake for 12-18 minutes, or until the tortillas are lightly golden and the cheese inside is fully melted and bubbly.
- Serve: Once baked, let the rollups cool for a minute or two. Slice each rollup into 3-4 pieces using a sharp knife. Arrange on a platter and serve immediately with individual bowls of the warm au jus for dipping.
