  • 1 cup powdered sugar
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup finely chopped pecans
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1/4 cup tequila (optional)
  • 1/4 cup orange liqueur (like Triple Sec or Cointreau)
  • 1/4 teaspoon salt
  • Extra powdered sugar for rolling
  • Fresh lime wedges for garnish (optional)
  • Coconut flakes for garnish (optional)

Instructions

  1. In a large mixing bowl, combine the crushed vanilla wafers, powdered sugar, shredded coconut, and chopped pecans. Mix until well combined.
  2. Add the fresh lime juice, lime zest, tequila (if using), orange liqueur, and salt. Mix until everything is well incorporated and forms a sticky dough. If the mixture is too dry, add more lime juice or a splash of tequila.
  3. Cover the bowl with plastic wrap or a clean kitchen towel and refrigerate for at least 30 minutes to firm up the mixture.
  4. Prepare a clean surface or a baking sheet lined with parchment paper.
  5. Scoop out about a tablespoon of the mixture and roll it into a ball, about the size of a golf ball. Dust your hands with powdered sugar if the mixture sticks.
  6. Roll each ball in extra powdered sugar until fully coated.
  7. Garnish each ball with shredded coconut or a small lime wedge if desired.
  8. Place the finished balls back on the parchment-lined baking sheet. Dust with more powdered sugar if you have leftovers.
  9. Cover the baking sheet with plastic wrap and chill for another 30 minutes before serving.

Notes

  • For a non-alcoholic version, simply omit the tequila and orange liqueur.
