  • Author: lila
  • Total Time: 30 minutes
  • Yield: 24 poppers 1x

Description

These Savory Cheddar And Beef Bacon Pancake Poppers are a delightful twist on traditional pancakes, combining fluffy batter with sharp cheddar cheese and crispy beef bacon. Perfect for brunch or a quick snack, they offer a symphony of savory flavors in every bite.

Ingredients

Scale
  • 1 ½ cups all-purpose flour (if making from scratch)
  • 1 tablespoon baking powder (if making from scratch)
  • ½ teaspoon salt (if making from scratch)
  • 1 large egg
  • 1 ¼ cups milk
  • Buttermilk pancake mix (as per package directions)
  • Sharp cheddar cheese (shredded)
  • Beef bacon (cooked and chopped)
  • Optional: garlic powder
  • Optional: onion powder
  • Optional: dried chives
  • Optional: black pepper
  • Optional: freshly chopped chives
  • Optional: finely diced green onions

Instructions

  1. Start by cooking your beef bacon until it's nice and crispy. Transfer it to a plate lined with paper towels to drain any excess grease. Let it cool slightly, then chop it into small, bite-sized pieces. Set aside.
  2. Preheat your oven to 375°F (190°C). Lightly grease the cups of your mini muffin pan with butter or cooking spray.
  3. In a large mixing bowl, combine your pancake mix according to package directions, using milk and eggs. Remember to omit or significantly reduce any sugar if your mix calls for it. If you're making batter from scratch, whisk together 1 ½ cups all-purpose flour, 1 tablespoon baking powder, ½ teaspoon salt, 1 large egg, and 1 ¼ cups milk until just combined.
  4. Gently fold in your shredded sharp cheddar cheese and the chopped crispy beef bacon into the prepared pancake batter. If you're adding any optional flavor enhancers, now is the time to stir them in.
  5. Spoon the savory batter into the prepared mini muffin cups, filling each about two-thirds full.
  6. Place the mini muffin pan in your preheated oven and bake for 10-15 minutes. They're ready when they are puffed up, golden brown, and a toothpick inserted into the center of a popper comes out clean.
  7. Once baked, remove the pan from the oven. Let the poppers cool in the pan for a few minutes before transferring them to a wire rack.
