- 1 large egg
- 1 tablespoon water or milk

Instructions
- Make sure your puff pastry is properly thawed in the refrigerator. Take it out about 10-15 minutes before you plan to use it so it's pliable but still cold.
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a small bowl, whisk together one large egg with a tablespoon of water or milk to create your egg wash. Set aside.
- Carefully unroll your thawed puff pastry sheet onto a lightly floured surface or directly onto your parchment-lined baking sheet.
- Using a sharp knife or a pizza cutter, trim the edges to create a neat rectangle, if necessary. Then, cut the pastry into 12-16 equal squares, about 2-2.5 inches in size.
- Transfer each pastry square to your prepared baking sheet, leaving a little space between each one.
- Spoon about a teaspoon of pizza sauce onto the center of each pastry square. Spread it almost to the edges, leaving a small border.
- Layer a few pieces of beef pepperoni on top of the sauce, cutting larger slices into smaller pieces if necessary.
- Sprinkle a generous pinch of shredded mozzarella and a smaller pinch of grated Parmesan over the pepperoni. Add any optional seasonings if desired.
- To shape the bites, you can leave them as open squares or gently bring two opposite corners of each square towards the center and lightly press them down.
- Lightly brush the exposed puff pastry edges with your egg wash.
- Transfer your baking sheet(s) to the preheated oven and bake for 12-18 minutes, or until the puff pastry is golden brown and the cheese is melted.
- Once baked, let the bites cool on the baking sheet for about 5 minutes before transferring them to a wire rack. Serve warm.
