  • shredded low-moisture mozzarella cheese

  • 1 tablespoon water or milk

  • dried oregano (optional)
  • red pepper flakes (optional)

Instructions

  1. Make sure your puff pastry is properly thawed in the refrigerator. Take it out about 10-15 minutes before you plan to use it so it's pliable but still cold.
  2. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  3. In a small bowl, whisk together one large egg with a tablespoon of water or milk to create your egg wash. Set aside.
  4. Carefully unroll your thawed puff pastry sheet onto a lightly floured surface or directly onto your parchment-lined baking sheet.
  5. Using a sharp knife or a pizza cutter, trim the edges to create a neat rectangle, if necessary. Then, cut the pastry into 12-16 equal squares, about 2-2.5 inches in size.
  6. Transfer each pastry square to your prepared baking sheet, leaving a little space between each one.
  7. Spoon about a teaspoon of pizza sauce onto the center of each pastry square. Spread it almost to the edges, leaving a small border.
  8. Layer a few pieces of beef pepperoni on top of the sauce, cutting larger slices into smaller pieces if necessary.
  9. Sprinkle a generous pinch of shredded mozzarella and a smaller pinch of grated Parmesan over the pepperoni. Add any optional seasonings if desired.
  10. To shape the bites, you can leave them as open squares or gently bring two opposite corners of each square towards the center and lightly press them down.
  11. Lightly brush the exposed puff pastry edges with your egg wash.
  12. Transfer your baking sheet(s) to the preheated oven and bake for 12-18 minutes, or until the puff pastry is golden brown and the cheese is melted.
  13. Once baked, let the bites cool on the baking sheet for about 5 minutes before transferring them to a wire rack. Serve warm.
