Instructions

  1. In a small bowl, mix together 1/4 cup of brown sugar, 2 tablespoons of melted butter, and 2 teaspoons of cinnamon until it forms a smooth paste. Set it aside.
  2. In a large mixing bowl, whisk together 1 cup of all-purpose flour, 2 tablespoons of granulated sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
  3. In another bowl, combine 1 cup of milk, 1 large egg, and 2 tablespoons of melted butter. Stir until well blended.
  4. Pour the wet ingredients into the dry ingredients. Gently fold them together until just mixed; do not overmix. The batter should be a little lumpy.
  5. Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake. Allow it to cook for about 2-3 minutes until bubbles form on the surface.
  7. Before flipping, use a spoon to drizzle the cinnamon swirl mixture in a spiral pattern on top of the pancake. Then, gently flip and cook for another 2-3 minutes, or until golden brown.
  8. Continue this process with the remaining batter and cinnamon swirl mixture, making sure to grease the pan as needed.
