Instructions
- In a small bowl, mix together 1/4 cup of brown sugar, 2 tablespoons of melted butter, and 2 teaspoons of cinnamon until it forms a smooth paste. Set it aside.
- In a large mixing bowl, whisk together 1 cup of all-purpose flour, 2 tablespoons of granulated sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
- In another bowl, combine 1 cup of milk, 1 large egg, and 2 tablespoons of melted butter. Stir until well blended.
- Pour the wet ingredients into the dry ingredients. Gently fold them together until just mixed; do not overmix. The batter should be a little lumpy.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Allow it to cook for about 2-3 minutes until bubbles form on the surface.
- Before flipping, use a spoon to drizzle the cinnamon swirl mixture in a spiral pattern on top of the pancake. Then, gently flip and cook for another 2-3 minutes, or until golden brown.
- Continue this process with the remaining batter and cinnamon swirl mixture, making sure to grease the pan as needed.
- Once all pancakes are cooked, serve them warm with your favorite toppings such as maple syrup, whipped cream, or fresh fruit.
