  • ½ lb cooked lobster meat (claw + tail), chopped
  • 2 tbsp unsalted butter

  • 2 tbsp mayo
  • 1 tbsp sour cream
  • 1 tbsp lemon juice
  • 1 tsp Old Bay seasoning
  • 1 tbsp fresh parsley, chopped
  • Salt & pepper to taste

Instructions

  1. In a skillet, melt 2 tablespoons of unsalted butter over medium heat. Allow it to melt completely until it starts to bubble gently, which should take about 1-2 minutes. Avoid letting it brown; you want it just melted and fragrant.
  2. Add in the 2 minced garlic cloves and sauté for about 1 minute until fragrant, stirring constantly. You’ll know it’s ready when the garlic turns golden but not browned, as burnt garlic can taste bitter.
  3. Toss in the ½ lb of chopped cooked lobster meat, stirring it well to coat with the garlic butter. Heat it for about 2-3 minutes, until the lobster is warmed through. Be careful not to overcook; you want it just hot enough without becoming rubbery.
  4. In a separate bowl, combine 2 tablespoons of mayo, 1 tablespoon of sour cream, 1 tablespoon of lemon juice, 1 teaspoon of Old Bay seasoning, and 1 tablespoon of chopped fresh parsley. Season with salt and pepper to taste. Mix until smooth, then fold in the sautéed lobster mixture until well coated.
  5. Brush the outside of each bun with melted butter and toast them in the skillet over medium heat for about 2-3 minutes on each side, or until golden and crispy. Keep an eye out; you want them toasted but not burnt!
