- 2 New England-style split-top buns or brioche hot dog buns
- ½ lb cooked lobster meat (claw + tail), chopped
- 2 tbsp unsalted butter
- 2 garlic cloves, minced
- 2 tbsp mayo
- 1 tbsp sour cream
- 1 tbsp lemon juice
- 1 tsp Old Bay seasoning
- 1 tbsp fresh parsley, chopped
- Salt & pepper to taste
- Optional: pinch of cayenne for heat
- Melted butter for brushing buns
Instructions
- In a skillet, melt 2 tablespoons of unsalted butter over medium heat. Allow it to melt completely until it starts to bubble gently, which should take about 1-2 minutes. Avoid letting it brown; you want it just melted and fragrant.
- Add in the 2 minced garlic cloves and sauté for about 1 minute until fragrant, stirring constantly. You’ll know it’s ready when the garlic turns golden but not browned, as burnt garlic can taste bitter.
- Toss in the ½ lb of chopped cooked lobster meat, stirring it well to coat with the garlic butter. Heat it for about 2-3 minutes, until the lobster is warmed through. Be careful not to overcook; you want it just hot enough without becoming rubbery.
- In a separate bowl, combine 2 tablespoons of mayo, 1 tablespoon of sour cream, 1 tablespoon of lemon juice, 1 teaspoon of Old Bay seasoning, and 1 tablespoon of chopped fresh parsley. Season with salt and pepper to taste. Mix until smooth, then fold in the sautéed lobster mixture until well coated.
- Brush the outside of each bun with melted butter and toast them in the skillet over medium heat for about 2-3 minutes on each side, or until golden and crispy. Keep an eye out; you want them toasted but not burnt!
- Once toasted, take the buns off the heat and generously fill each with the lobster mixture. Aim for a heaping pile to ensure every bite is packed with flavor!
