Ingredients
Scale
- 2 cups rolled oats
- 2 ripe bananas
- 1 cup fresh blueberries
- 1/2 cup almond butter (or peanut butter or sunflower seed butter)
- 1/4 cup honey (or maple syrup)
- 1 teaspoon baking powder
- a pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Line an 8×8-inch baking dish with parchment paper, allowing some overhang for easy removal later.
- In a large bowl, mash the ripe bananas until smooth.
- Mix in the nut butter and honey (or maple syrup) with the mashed bananas until well combined.
- In a separate bowl, combine the rolled oats, baking powder, and a pinch of salt. Stir well.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the blueberries.
- Transfer the mixture into your prepared baking dish. Spread it evenly with a spatula.
- Place the dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Once baked, let the bars cool in the dish for about 10 minutes. Then, using the parchment overhang, lift the bars out and let them cool completely on a wire rack before cutting into squares.
