Description

These Blueberry Banana Oatmeal Breakfast Bars are a wholesome and energizing way to kick-start your day. Packed with oats, ripe bananas, and fresh blueberries, they offer a perfect balance of flavors and textures.

Ingredients

Scale
  • 2 cups rolled oats
  • 2 ripe bananas
  • 1 cup fresh blueberries
  • 1/2 cup almond butter (or peanut butter or sunflower seed butter)
  • 1/4 cup honey (or maple syrup)
  • 1 teaspoon baking powder
  • a pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line an 8×8-inch baking dish with parchment paper, allowing some overhang for easy removal later.
  3. In a large bowl, mash the ripe bananas until smooth.
  4. Mix in the nut butter and honey (or maple syrup) with the mashed bananas until well combined.
  5. In a separate bowl, combine the rolled oats, baking powder, and a pinch of salt. Stir well.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the blueberries.
  7. Transfer the mixture into your prepared baking dish. Spread it evenly with a spatula.
  8. Place the dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  9. Once baked, let the bars cool in the dish for about 10 minutes. Then, using the parchment overhang, lift the bars out and let them cool completely on a wire rack before cutting into squares.
