- 2–3 ripe bananas
- 1/2 cup melted unsalted butter
- 1 cup granulated sugar
- 2 eggs (or flax eggs)
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- a pinch of salt
- 1/2 cup chocolate chips or chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper for easy removal.
- In a large mixing bowl, mash 2-3 ripe bananas until smooth. You should have about 1 cup of mashed bananas.
- Add in 1/2 cup of melted unsalted butter and 1 cup of sugar to the mashed bananas. Mix well. Then, add 2 eggs (or flax eggs) and 1 teaspoon of vanilla extract, stirring until everything is well combined.
- In a separate bowl, mix 1 cup of all-purpose flour, 1/3 cup of unsweetened cocoa powder, 1/2 teaspoon of baking soda, and a pinch of salt.
- Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are fine.
- If you want extra indulgence, fold in 1/2 cup of chocolate chips or chopped nuts at this stage.
- Pour the batter into your prepared baking dish, smoothing out the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Cut into squares and enjoy!
