Ingredients

Scale
  • 1 cup Unsalted Butter, softened
  • 3/4 cup Granulated Sugar
  • 3/4 cup Light Brown Sugar
  • 2 Large Eggs, at room temperature
  • 2 teaspoons Pure Vanilla Extract
  • 2 1/4 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 1/2 cups White Chocolate Chips or Chunks
  • 1 cup Macadamia Nuts, roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides. Lightly grease the parchment paper.
  2. In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. With the mixer on low speed, gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the white chocolate chips and macadamia nuts using a spatula or wooden spoon.
  7. Transfer the cookie dough to the prepared baking pan and press it evenly into the pan.
  8. Bake for 25-30 minutes until the edges are lightly golden brown and the center is set but slightly soft.
  9. Let the cookie bars cool completely in the pan on a wire rack for at least 1-2 hours before cutting into squares or rectangles.
