  • 1 cup chocolate chips

Instructions

  2. Press the crumb mixture into the bottom of mini muffin tins or silicone molds to form a solid base. Make sure to pack it tightly. Place the tins in the refrigerator to set while you prepare the cheesecake filling.
  3. In a large mixing bowl, beat 8 oz of softened cream cheese until smooth. Gradually add in 1/2 cup of granulated sugar and 1 teaspoon of vanilla extract, mixing until well combined.
  4. Fold in 1 cup of whipped cream until the mixture is light and fluffy. Be gentle to maintain the airy texture.
  5. Spoon the cheesecake filling on top of the prepared graham cracker bases, filling each mold to the top. Smooth out the surface with a spatula for a neat finish.
