Ingredients
Scale
- 1 cup graham cracker crumbs
- 2 tablespoons melted butter
- 2 tablespoons granulated sugar
- 8 oz softened cream cheese
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- Caramel sauce
- 1 cup chocolate chips
Instructions
- In a medium bowl, combine 1 cup of graham cracker crumbs with 2 tablespoons of melted butter and 2 tablespoons of granulated sugar. Mix until the crumbs are evenly coated.
- Press the crumb mixture into the bottom of mini muffin tins or silicone molds to form a solid base. Make sure to pack it tightly. Place the tins in the refrigerator to set while you prepare the cheesecake filling.
- In a large mixing bowl, beat 8 oz of softened cream cheese until smooth. Gradually add in 1/2 cup of granulated sugar and 1 teaspoon of vanilla extract, mixing until well combined.
- Fold in 1 cup of whipped cream until the mixture is light and fluffy. Be gentle to maintain the airy texture.
- Spoon the cheesecake filling on top of the prepared graham cracker bases, filling each mold to the top. Smooth out the surface with a spatula for a neat finish.
- Drizzle caramel sauce generously over each cheesecake bite. You can be creative here—add as much or as little as you like!
- Refrigerate the bites for at least 2 hours or until set.
- Just before serving, melt 1 cup of chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Dip the top of each cheesecake bite into the melted chocolate, allowing any excess to drip off.
- Return the cheesecake bites to the fridge for another 30 minutes to let the chocolate set.
- Once the chocolate is firm, pop the bites out of the mold and serve chilled.
