Ingredients
- Navy beans or pinto beans (dried or canned)
- Beef bacon or smoked tempeh (for vegetarian option)
- BBQ sauce (store-bought or homemade)
- Brown sugar
- Onion (diced)
- Garlic (minced)
- Yellow mustard or Dijon mustard
- Salt
- Pepper
Instructions
- If you’re using dried beans, soak them overnight in water. Drain and rinse them before cooking. If you’re using canned beans, simply rinse and set aside.
- In a skillet over medium heat, cook the beef bacon until crispy, about 5-7 minutes. Transfer it to a paper towel to drain, then chop into bite-sized pieces.
- In the same skillet, add diced onions and minced garlic. Sauté until the onions are translucent, about 3-4 minutes.
- In your crock pot, combine the soaked or canned beans, cooked bacon, sautéed onions and garlic, BBQ sauce, brown sugar, mustard, and a pinch of salt and pepper.
- Stir everything together until the beans are well coated with the sauce and all ingredients are evenly distributed.
- Cover the crock pot and set it to low heat. Let the beans cook for 6-8 hours or on high for 3-4 hours, stirring occasionally if possible.
- The beans should be tender and the sauce thickened when they are ready. If the sauce is too thin, remove the lid for the last 30 minutes to allow it to thicken.
- Once cooked, give the beans a good stir, taste, and adjust seasoning if needed. Serve them warm, and enjoy the rich flavors!
