Ingredients
Scale
- 2 pounds of baby potatoes (or any small potatoes)
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the baby potatoes under cold water and pat them dry. Leave them whole or cut them in half if larger.
- In a large pot, add water and a generous pinch of salt. Bring to a boil and add the potatoes. Boil for 10-15 minutes until fork-tender but firm.
- Drain the potatoes in a colander and let them cool for a few minutes to dry out.
- In a large bowl, combine Parmesan cheese, olive oil, garlic powder, onion powder, smoked paprika, dried oregano, salt, and pepper. Mix until it forms a thick paste.
- Add the cooled potatoes to the bowl and gently toss until evenly coated.
- Line a baking sheet with parchment paper or grease it lightly.
- Spread the coated potatoes in a single layer on the baking sheet, ensuring they are not overcrowded.
- Bake for 25-30 minutes, flipping halfway through for even browning.
- After 25-30 minutes, check for golden brown and crispy texture. Bake longer if needed, checking frequently.
- Remove from the oven, let cool slightly, and sprinkle with chopped parsley.
- Transfer to a serving platter and enjoy warm, optionally with a dipping sauce.
