Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the refrigerated cheese tortellini and cook according to package instructions (about 3-5 minutes) until they float to the top and are tender.
  3. Drain the tortellini in a colander and let them cool for a few minutes.
  4. Set up three shallow bowls or plates.
  5. In the first bowl, add all-purpose flour and season with a pinch of salt and pepper.
  6. In the second bowl, crack the eggs and whisk until well combined.
  7. In the third bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, and additional salt and pepper. Mix well.
  8. Take a cooled tortellini and dip it into the flour, coating evenly and shaking off excess.
  9. Dip the floured tortellini into the egg mixture, ensuring full coverage.
  10. Roll the tortellini in the breadcrumb mixture, pressing gently to adhere. Place on a baking sheet or plate. Repeat with remaining tortellini.
  11. In a large skillet, pour enough vegetable oil to cover the bottom by about 1/4 inch. Heat over medium-high heat.
  12. Test the oil by dropping in a small piece of bread; if it sizzles, the oil is ready.
  13. Carefully add a few breaded tortellini to the pan, avoiding overcrowding. Fry in batches if necessary.
