  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons of fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the baby potatoes under cold water to remove any dirt.
  3. Leave the potatoes whole or cut them in half or quarters for even cooking.
  4. In a large pot, cover the potatoes with water and bring to a boil. Cook for 10-15 minutes until fork-tender but firm.
  5. Drain the potatoes and let them sit in a colander for a few minutes to steam dry.
  6. In a large mixing bowl, combine olive oil, minced garlic, salt, black pepper, dried oregano, and paprika. Stir well.
  7. Add the dried potatoes to the bowl and gently toss to coat.
  8. Sprinkle grated Parmesan cheese over the potatoes and toss gently to adhere.
  9. Line a baking sheet with parchment paper or grease it lightly.
  10. Transfer the coated potatoes to the baking sheet in a single layer.
  11. Bake for 25-30 minutes, tossing halfway through for even browning.
  12. After 25 minutes, check for golden brown and crispy texture. Bake longer if needed.
  13. Remove from the oven, let cool for a couple of minutes, and sprinkle with chopped parsley.
