Crispy Garlic Parmesan Potatoes are a delicious side dish made with tender baby potatoes tossed in a savory garlic and herb blend, then roasted until golden and crispy. - 2 pounds of baby potatoes
- 4 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of dried oregano
- 1 teaspoon of paprika
- 1/2 cup of grated Parmesan cheese
- 2 tablespoons of fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the baby potatoes under cold water to remove any dirt.
- Leave the potatoes whole or cut them in half or quarters for even cooking.
- In a large pot, cover the potatoes with water and bring to a boil. Cook for 10-15 minutes until fork-tender but firm.
- Drain the potatoes and let them sit in a colander for a few minutes to steam dry.
- In a large mixing bowl, combine olive oil, minced garlic, salt, black pepper, dried oregano, and paprika. Stir well.
- Add the dried potatoes to the bowl and gently toss to coat.
- Sprinkle grated Parmesan cheese over the potatoes and toss gently to adhere.
- Line a baking sheet with parchment paper or grease it lightly.
- Transfer the coated potatoes to the baking sheet in a single layer.
- Bake for 25-30 minutes, tossing halfway through for even browning.
- After 25 minutes, check for golden brown and crispy texture. Bake longer if needed.
- Remove from the oven, let cool for a couple of minutes, and sprinkle with chopped parsley.
- Transfer to a serving platter and enjoy warm. Serve as a side dish or snack.
- Serve with garlic aioli or spicy ketchup for added flavor.
