- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup frozen peas
- 1 teaspoon dried Italian herbs (or a mix of basil, oregano, and thyme)
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts on both sides with garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown. Remove from skillet and cover with foil to keep warm.
- In the same skillet, add the orzo pasta and toast for 2-3 minutes, stirring frequently.
- Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and let simmer for 10-12 minutes, or until the orzo is al dente and has absorbed most of the broth, stirring occasionally.
- Stir in the heavy cream until combined.
- Add the grated Parmesan cheese and stir until melted and well combined.
- Mix in the frozen peas and dried Italian herbs, cooking for an additional 2-3 minutes until the peas are heated through.
- Slice the cooked chicken into strips or bite-sized pieces and gently fold into the creamy orzo mixture, ensuring the chicken is well coated.
- Taste and adjust seasoning if necessary.
- Serve the creamy Parmesan orzo chicken on plates or in bowls, garnished with freshly chopped parsley. Enjoy immediately.
