  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup frozen peas
  • 1 teaspoon dried Italian herbs (or a mix of basil, oregano, and thyme)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts on both sides with garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown. Remove from skillet and cover with foil to keep warm.
  3. In the same skillet, add the orzo pasta and toast for 2-3 minutes, stirring frequently.
  4. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and let simmer for 10-12 minutes, or until the orzo is al dente and has absorbed most of the broth, stirring occasionally.
  5. Stir in the heavy cream until combined.
  6. Add the grated Parmesan cheese and stir until melted and well combined.
  7. Mix in the frozen peas and dried Italian herbs, cooking for an additional 2-3 minutes until the peas are heated through.
  8. Slice the cooked chicken into strips or bite-sized pieces and gently fold into the creamy orzo mixture, ensuring the chicken is well coated.
  9. Taste and adjust seasoning if necessary.
