  • Butter

Instructions

  1. Start by patting your chicken breasts or thighs dry with paper towels. Season them generously with salt, pepper, and a pinch of Italian seasoning.
  2. Bring a large pot of salted water to a rolling boil. Add your chosen pasta and cook according to package directions until al dente. Before draining, reserve about 1 cup of the starchy pasta water. Drain the remaining water and set the pasta aside.
  3. While the pasta is cooking, heat a large skillet or Dutch oven over medium-high heat. Add a tablespoon of olive oil and a tablespoon of butter. Once the butter is melted and shimmering, add the seasoned chicken pieces in a single layer. Sear for about 3-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
  4. Reduce the heat to medium. Add another tablespoon of butter and a splash of olive oil to the same skillet. Add your minced garlic and, if using, red pepper flakes. Sauté for about 1 minute, stirring constantly, until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Bring it to a gentle simmer and let it reduce slightly for about 2-3 minutes. Then, stir in the heavy cream and a bit more Italian seasoning. Continue to simmer gently for another 3-5 minutes, allowing the sauce to thicken slightly.
  6. Remove the skillet from the heat and gradually stir in the freshly grated Parmesan cheese until melted and smooth. If the sauce seems too thick, add a splash of your reserved pasta water until it reaches your desired consistency.
  7. Add the cooked pasta back into the skillet with the creamy garlic sauce. Add the cooked chicken pieces. Toss everything together until thoroughly coated in the sauce.
  8. Serve immediately, garnished with fresh chopped parsley and an extra sprinkle of Parmesan cheese.
