- 1 ripe avocado

- Optional: 1 tablespoon of mayonnaise or Greek yogurt for extra creaminess

Instructions
- Cut the avocado in half, twist to separate the halves, and remove the pit.
- Scoop the avocado flesh into a mixing bowl and mash it with a fork to your desired consistency.
- Season the mashed avocado with salt and pepper. If using, mix in mayonnaise or Greek yogurt for creaminess.
- Chop fresh herbs finely and fold them into the avocado mixture. Add red pepper flakes if desired. Set aside.
- Lay the slices of bread flat. Spread a thin layer of butter or brush with olive oil on one side of each slice.
- Heat a skillet or griddle over medium heat. Place one slice of bread, buttered side down, in the skillet.
- Layer cheese slices on top of the bread in the skillet.
- Generously spread the avocado mixture on top of the cheese.
- Place the second slice of bread on top, buttered side facing up.
- Cook for 3-4 minutes until the first side is golden brown. Flip carefully using a spatula.
- Cook the second side for another 3-4 minutes until golden brown and cheese is melted. Lower heat if necessary.
- For thicker bread, cover the skillet with a lid for a minute to help the cheese melt.
