  • Optional: 1 tablespoon of mayonnaise or Greek yogurt for extra creaminess

Instructions

  1. Cut the avocado in half, twist to separate the halves, and remove the pit.
  2. Scoop the avocado flesh into a mixing bowl and mash it with a fork to your desired consistency.
  3. Season the mashed avocado with salt and pepper. If using, mix in mayonnaise or Greek yogurt for creaminess.
  4. Chop fresh herbs finely and fold them into the avocado mixture. Add red pepper flakes if desired. Set aside.
  5. Lay the slices of bread flat. Spread a thin layer of butter or brush with olive oil on one side of each slice.
  6. Heat a skillet or griddle over medium heat. Place one slice of bread, buttered side down, in the skillet.
  7. Layer cheese slices on top of the bread in the skillet.
  8. Generously spread the avocado mixture on top of the cheese.
  9. Place the second slice of bread on top, buttered side facing up.
  10. Cook for 3-4 minutes until the first side is golden brown. Flip carefully using a spatula.
