  • 1 pound chorizo sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon taco seasoning
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Chips or veggies for serving

Instructions

  1. In a large skillet over medium heat, add the ground beef and chorizo sausage. Use a wooden spoon to break up the meat as it cooks. Sauté until browned and cooked through, about 8-10 minutes.
  2. Once the meat is cooked, drain any excess fat from the skillet.
  3. Add the diced onion to the skillet and cook for an additional 3-4 minutes, or until the onion is translucent and fragrant.
  4. Stir in the minced garlic and cook for another minute, just until the garlic is fragrant.
  5. Pour in the diced tomatoes with green chilies, black beans, and corn. Stir everything together until well combined.
  6. Add the softened cream cheese to the skillet. Use a spatula to mix it in thoroughly.
  7. Once the cream cheese is fully incorporated, sprinkle in the taco seasoning and cumin. Stir well to ensure the spices are evenly distributed.
  8. Add the shredded cheddar cheese and Monterey Jack cheese. Stir until the cheeses are melted and the mixture is creamy.
  9. Taste the dip and season with salt and pepper as needed.
  10. If desired, add hot sauce or diced jalapeños for extra heat.
  11. Reduce the heat to low and let the dip simmer for about 10-15 minutes, stirring occasionally.
