Description

This sautéed green beans dish is a colorful and tasty side, featuring tender green beans cooked with aromatic onions, garlic, and herbs. Finished with a splash of apple cider vinegar and optional feta cheese, it adds a delightful twist to any meal. Perfectly seasoned and quick to prepare, it complements a variety of main dishes.

Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth (or vegetable broth for a vegetarian option)
  • 1 tablespoon apple cider vinegar
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the green beans under cold water to remove any dirt or debris.
  2. Trim the ends of the green beans by snapping them off or using a knife.
  3. Set the green beans aside or store them in a zip-top bag in the refrigerator if preparing ahead.
  4. In a large skillet, heat the olive oil over medium heat.
  5. Add the diced onion and sauté for about 3-4 minutes until translucent.
  6. Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to burn it.
  7. Sprinkle in the dried thyme, oregano, salt, black pepper, and red pepper flakes (if using). Stir to coat the onions and garlic evenly.
  8. Cook for another minute to allow the spices to bloom.
  9. Add the trimmed green beans to the skillet, stirring them into the onion and garlic mixture.
  10. Pour in the chicken or vegetable broth and bring to a gentle simmer.
  11. Cover the skillet and cook for 5-7 minutes until the green beans are tender yet still crunchy. For softer beans, cook an additional 2-3 minutes.
  12. Remove the lid and stir in the apple cider vinegar.
  13. If using, sprinkle the crumbled feta cheese over the green beans.
  14. Garnish with freshly chopped parsley.
  15. Toss gently to combine and taste for seasoning, adjusting with more salt or pepper as needed.

Notes

  • For a vegetarian option, use vegetable broth instead of chicken broth.
  • Feel free to adjust the amount of red pepper flakes based on your heat preference.
  • This dish pairs well with grilled meats, fish, or as part of a vegetarian meal.
