Ingredients
Scale
- 1 pound fresh green beans, trimmed
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup chicken broth (or vegetable broth for a vegetarian option)
- 1 tablespoon apple cider vinegar
- 1/4 cup crumbled feta cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse the green beans under cold water to remove any dirt or debris.
- Trim the ends of the green beans by snapping them off or using a knife.
- Set the green beans aside or store them in a zip-top bag in the refrigerator if preparing ahead.
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to burn it.
- Sprinkle in the dried thyme, oregano, salt, black pepper, and red pepper flakes (if using). Stir to coat the onions and garlic evenly.
- Cook for another minute to allow the spices to bloom.
- Add the trimmed green beans to the skillet, stirring them into the onion and garlic mixture.
- Pour in the chicken or vegetable broth and bring to a gentle simmer.
- Cover the skillet and cook for 5-7 minutes until the green beans are tender yet still crunchy. For softer beans, cook an additional 2-3 minutes.
- Remove the lid and stir in the apple cider vinegar.
- If using, sprinkle the crumbled feta cheese over the green beans.
- Garnish with freshly chopped parsley.
- Toss gently to combine and taste for seasoning, adjusting with more salt or pepper as needed.
Notes
- For a vegetarian option, use vegetable broth instead of chicken broth.
- Feel free to adjust the amount of red pepper flakes based on your heat preference.
- This dish pairs well with grilled meats, fish, or as part of a vegetarian meal.
