  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • Chocolate sauce (for drizzling, optional)
  • Whipped cream (for serving, optional)

Instructions

  1. In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, salt, and cinnamon. Whisk until well blended.
  2. In a separate bowl, mix the wet ingredients: milk, egg, melted butter, and vanilla extract. Whisk until fully combined.
  3. Slowly pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined. A few lumps are fine to keep the pancakes fluffy.
  4. Heat a non-stick skillet or griddle over medium heat. Test readiness by sprinkling a few drops of water; if they sizzle, it’s ready.
  5. Lightly grease the skillet with butter or cooking spray.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake, leaving space between them.
  7. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  8. Transfer cooked pancakes to a plate and keep warm in a low oven (200°F or 93°C) while cooking the remaining batter.
  9. In a small bowl, mix together the sugar and cinnamon for coating.
  10. Dip one side of each pancake into the cinnamon-sugar mixture until well coated.
  11. Stack 2-3 pancakes on a plate.
  12. Drizzle with chocolate sauce if desired and add a dollop of whipped cream.
  13. Sprinkle a little extra cinnamon-sugar on top for a finishing touch.

  • For a richer flavor, consider adding chocolate chips to the batter before cooking.
