- 1 large egg
- 1 cup semi-sweet chocolate chips
- 1 cup milk chocolate chips (for topping)
- 1 cup mini chocolate chips (optional, for extra texture)
- 1 package of mini cupcake liners
- 1 cup chocolate melting wafers (for coating)
Instructions
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
- In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
- Add the vanilla extract and the egg to the butter-sugar mixture, mixing until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined.
- Fold in the semi-sweet chocolate chips and mini chocolate chips (if using) with a spatula.
- Cover the bowl with plastic wrap or transfer the dough to an airtight container.
- Refrigerate the dough for at least 30 minutes.
- In a microwave-safe bowl, melt the chocolate melting wafers in 30-second intervals, stirring in between until smooth.
- Let the melted chocolate cool slightly before using.
- Line a mini muffin tin with mini cupcake liners.
- Fill each cupcake liner with about 1 tablespoon of melted chocolate, spreading it up the sides to create a cup shape.
- Refrigerate for 10-15 minutes until the chocolate hardens.
- Scoop about 1 tablespoon of chilled cookie dough into each chocolate cup, pressing down gently.
- Melt any remaining chocolate wafers and spoon a layer over each filled cup, ensuring the cookie dough is covered.
- Sprinkle extra chocolate chips on top for decoration, if desired.
- Return to the refrigerator for another 15-20 minutes until the chocolate is set.
- Once the chocolate has hardened, peel away the cupcake liners and enjoy your delicious cookie dough cups!
