  • 1 cup semi-sweet chocolate chips
  • 1 cup milk chocolate chips (for topping)

  • 1 package of mini cupcake liners
  • 1 cup chocolate melting wafers (for coating)

Instructions

  1. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  2. In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
  3. Add the vanilla extract and the egg to the butter-sugar mixture, mixing until well combined.
  4. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined.
  5. Fold in the semi-sweet chocolate chips and mini chocolate chips (if using) with a spatula.
  6. Cover the bowl with plastic wrap or transfer the dough to an airtight container.
  7. Refrigerate the dough for at least 30 minutes.
  8. In a microwave-safe bowl, melt the chocolate melting wafers in 30-second intervals, stirring in between until smooth.
  9. Let the melted chocolate cool slightly before using.
  10. Line a mini muffin tin with mini cupcake liners.
  11. Fill each cupcake liner with about 1 tablespoon of melted chocolate, spreading it up the sides to create a cup shape.
  12. Refrigerate for 10-15 minutes until the chocolate hardens.
  13. Scoop about 1 tablespoon of chilled cookie dough into each chocolate cup, pressing down gently.
  14. Melt any remaining chocolate wafers and spoon a layer over each filled cup, ensuring the cookie dough is covered.

  16. Return to the refrigerator for another 15-20 minutes until the chocolate is set.
