- 1 pound boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon olive oil
- 8 waffles (store-bought or homemade)
- 1 cup shredded cheddar cheese
- 4 large eggs
- 2 cups milk
- 1/4 cup maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Season chicken breasts with salt, black pepper, garlic powder, and onion powder.
- Heat olive oil in a large skillet over medium heat. Add seasoned chicken and cook for 5-7 minutes on each side until the internal temperature reaches 165°F (75°C).
- Remove chicken from skillet, let it rest, then chop into bite-sized pieces. Set aside.
- If using store-bought waffles, skip this step. For homemade, prepare your favorite waffle batter.
- Cut waffles into quarters and set aside.
- In a large mixing bowl, whisk together the eggs until well beaten.
- Add milk, maple syrup, baking powder, ground cinnamon, and nutmeg (if using). Whisk until smooth.
- Fold in chopped chicken and half of the shredded cheddar cheese.
- Grease a 9×13 inch baking dish. Layer half of the waffle quarters on the bottom.
- Pour half of the chicken and egg mixture over the waffles.
- Add the remaining waffle pieces on top, followed by the rest of the chicken and egg mixture.
- Sprinkle the remaining cheddar cheese on top.
- Bake in the preheated oven for 30-35 minutes, or until set and cheese is bubbly and golden brown.
- Check for doneness by inserting a knife into the center; it should come out clean.
- Let cool for about 10 minutes before serving.
- Cut into squares or rectangles and serve warm, garnished with fresh parsley if desired. Drizzle with additional maple syrup for extra sweetness.
