  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 8 waffles (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 2 cups milk
  • 1/4 cup maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season chicken breasts with salt, black pepper, garlic powder, and onion powder.
  3. Heat olive oil in a large skillet over medium heat. Add seasoned chicken and cook for 5-7 minutes on each side until the internal temperature reaches 165°F (75°C).
  4. Remove chicken from skillet, let it rest, then chop into bite-sized pieces. Set aside.
  5. If using store-bought waffles, skip this step. For homemade, prepare your favorite waffle batter.
  6. Cut waffles into quarters and set aside.
  7. In a large mixing bowl, whisk together the eggs until well beaten.
  8. Add milk, maple syrup, baking powder, ground cinnamon, and nutmeg (if using). Whisk until smooth.
  9. Fold in chopped chicken and half of the shredded cheddar cheese.
  10. Grease a 9×13 inch baking dish. Layer half of the waffle quarters on the bottom.
  11. Pour half of the chicken and egg mixture over the waffles.
  12. Add the remaining waffle pieces on top, followed by the rest of the chicken and egg mixture.
  13. Sprinkle the remaining cheddar cheese on top.
  14. Bake in the preheated oven for 30-35 minutes, or until set and cheese is bubbly and golden brown.
  15. Check for doneness by inserting a knife into the center; it should come out clean.
  16. Let cool for about 10 minutes before serving.
  17. Cut into squares or rectangles and serve warm, garnished with fresh parsley if desired. Drizzle with additional maple syrup for extra sweetness.

  • Feel free to customize the spices and cheese according to your taste preferences.
  • This casserole can be prepared ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the baking time if baking from cold.
