Instructions
- Preheat your oven to 350°F (175°C).
- Line a 9×13 inch baking pan with parchment paper, leaving overhang on the sides. Alternatively, grease the pan with butter or cooking spray.
- In a large mixing bowl, beat together 1 cup of softened unsalted butter and 1 ½ cups of granulated sugar on medium speed until light and fluffy (about 2-3 minutes).
- Add 2 large eggs one at a time, mixing well after each addition. Then, mix in 2 teaspoons of vanilla extract until smooth.
- In a separate bowl, whisk together 3 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, ½ teaspoon of salt, and 1 tablespoon of ground cinnamon.
- Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined. Avoid overmixing; stop when no flour streaks remain.
- Spread the batter evenly into the prepared baking pan, smoothing the top with a spatula.
- In a small bowl, mix together ½ cup of granulated sugar and 2 teaspoons of ground cinnamon.
- Evenly sprinkle the cinnamon sugar mixture over the top of the batter.
- Bake in the preheated oven for 20-25 minutes, until the edges are lightly golden and the center is set but still soft. A toothpick inserted should come out with a few moist crumbs.
- Remove from the oven and let cool in the pan for 10-15 minutes. Lift the bars out using the parchment overhang and transfer to a wire rack to cool completely.
- Once cool, cut into squares or rectangles as desired.
- Store leftovers in an airtight container at room temperature for up to a week, or freeze for longer storage.
