- 1/4 cup olive oil

Instructions
- Preheat your oven to 400°F (200°C).
- Place chicken breasts between two sheets of plastic wrap or parchment paper and pound to an even thickness of about 1 inch.
- Mix salt, black pepper, and Italian seasoning in a small bowl. Rub the mixture all over the chicken breasts.
- In a large bowl, mix grated Parmesan, shredded mozzarella, and breadcrumbs.
- Stir in minced garlic and chopped parsley into the cheese mixture until well combined.
- Drizzle olive oil over the mixture and mix until evenly coated.
- Press each seasoned chicken breast into the cheesy breadcrumb mixture, coating both sides thoroughly.
- Line a baking sheet with parchment paper or grease it lightly. Arrange the coated chicken breasts on the sheet.
- Bake for 25-30 minutes, or until the chicken is cooked through and the crust is golden brown (165°F/75°C).
- For a crispy topping, broil for the last 2-3 minutes, watching closely to prevent burning.
- Let the chicken rest for about 5 minutes after removing from the oven.
- Sprinkle with extra parsley and serve with roasted vegetables, salad, or pasta.
