  • 4 large apples (Honeycrisp, Granny Smith, or Fuji)

  • 8 oz cream cheese, softened

  • 1/4 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 egg yolk

  • 1/4 teaspoon ground cinnamon (optional)

  • Crushed graham crackers, granola, or nuts (for topping)

  • Optional: caramel sauce for drizzling


Instructions

  • Preheat oven to 350°F (175°C).

  • Core the apples, creating a hollow center without piercing the bottom.

  • In a medium bowl, beat together cream cheese, powdered sugar, vanilla extract, egg yolk, and cinnamon until creamy and smooth.

  • Fill each apple with the cheesecake mixture, piping or spooning it generously into the hollowed centers.

  • Place apples in a baking dish and add a splash of water to the bottom of the dish to prevent sticking.

  • Bake for 25–30 minutes, until the apples are tender and the cheesecake filling is lightly set and golden.

 

  • Top with crushed graham crackers, granola, nuts, or a drizzle of caramel before serving!

Notes

  • Use sturdy apples like Honeycrisp or Granny Smith that hold up well during baking.

  • Room temperature cream cheese blends much smoother for the filling.

  • Add toppings after baking so they stay crunchy and fresh.

  • Scoop carefully! Don’t cut through the bottom of the apple or the filling will leak out.
