Ingredients
-
4 large apples (Honeycrisp, Granny Smith, or Fuji)
-
8 oz cream cheese, softened
-
1/4 cup powdered sugar
-
1 teaspoon vanilla extract
-
1 egg yolk
-
1/4 teaspoon ground cinnamon (optional)
-
Crushed graham crackers, granola, or nuts (for topping)
-
Optional: caramel sauce for drizzling
Instructions
-
Preheat oven to 350°F (175°C).
-
Core the apples, creating a hollow center without piercing the bottom.
-
In a medium bowl, beat together cream cheese, powdered sugar, vanilla extract, egg yolk, and cinnamon until creamy and smooth.
-
Fill each apple with the cheesecake mixture, piping or spooning it generously into the hollowed centers.
-
Place apples in a baking dish and add a splash of water to the bottom of the dish to prevent sticking.
-
Bake for 25–30 minutes, until the apples are tender and the cheesecake filling is lightly set and golden.
-
Top with crushed graham crackers, granola, nuts, or a drizzle of caramel before serving!
Notes
-
Use sturdy apples like Honeycrisp or Granny Smith that hold up well during baking.
-
Room temperature cream cheese blends much smoother for the filling.
-
Add toppings after baking so they stay crunchy and fresh.
-
Scoop carefully! Don’t cut through the bottom of the apple or the filling will leak out.
-
Flavor twist: Add a dash of nutmeg or cloves for even more cozy spice!
