Enjoy these Cheddar BBQ Bacon Bombs, featuring a mouthwatering blend of ground beef, crispy bacon, and sharp cheddar cheese, all encased in fluffy biscuit dough. Ideal for gatherings or a cozy night, these tasty bites are sure to impress!

Ingredients

Scale
  • 1 pound of ground beef
  • 1 cup of shredded sharp cheddar cheese
  • 1 cup of cooked and crumbled bacon (about 8 slices)
  • 1/2 cup of BBQ sauce (plus extra for serving)
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 package of refrigerated biscuit dough (8 biscuits)
  • 1 tablespoon of olive oil (for brushing)
  • Optional: chopped green onions for garnish

Instructions

  1. In a large mixing bowl, combine the ground beef, shredded cheddar cheese, crumbled bacon, BBQ sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. Using your hands (or a spatula if you prefer), mix everything together until well combined. Ensure the cheese and bacon are evenly distributed throughout the beef.
  3. Taste a small amount of the mixture to check the seasoning. Adjust with more salt or pepper if needed.
  4. Preheat your oven to 375°F (190°C).
  5. Open the package of refrigerated biscuit dough and gently separate the 8 biscuits. Flatten each biscuit into a circle about 4 inches in diameter.
  6. Ensure the dough is not too thin; it should be sturdy enough to hold the filling without breaking.
  7. Take a flattened biscuit and place about 2 tablespoons of the beef filling in the center.
  8. Carefully fold the edges of the biscuit over the filling, pinching them together to seal. Ensure there are no gaps.
  9. Gently roll the bomb in your hands to form a round shape. Repeat for the remaining biscuits and filling.
  10. Place the assembled bombs seam-side down on a greased baking sheet, leaving space between each one.
  11. Brush the tops of each bomb with olive oil for a golden brown color.
  12. Optionally, sprinkle some additional smoked paprika or garlic powder on top before baking.
  13. Bake in the preheated oven for 15-20 minutes, or until golden brown and cooked through (internal temperature should reach 160°F/71°C).
  14. Remove from the oven and let cool for a few minutes before serving.
  15. Transfer the bombs to a serving platter and drizzle with extra BBQ sauce if desired.
  16. Garnish with chopped green onions for color and freshness.
  17. Serve warm with additional BBQ sauce on the side for dipping.

Notes

  • Feel free to customize the filling by adding your favorite spices or vegetables.
  • These bombs can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
