Instructions
- Start by patting the chicken breasts dry with paper towels. Season both sides generously with Cajun seasoning.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the seasoned chicken breasts. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice golden crust. Remove the chicken from the skillet and set aside.
- In the same skillet, add a little more olive oil if needed. Toss in the chopped onion, bell peppers, and minced garlic. Sauté for about 3-4 minutes until the vegetables are tender and fragrant.
- If you're using fresh corn, cut the kernels off the cob and add them to the skillet. If using frozen corn, add it directly. Stir and cook for another 3-4 minutes until heated through.
- Slice the cooked chicken into strips and return it to the skillet. Pour in about 1 cup of chicken broth to deglaze the pan, scraping up any brown bits from the bottom. Allow everything to simmer together for about 5 minutes, letting the flavors meld.
- Taste and adjust seasoning with more Cajun spice, salt, or pepper if necessary. For a touch of freshness, you might want to squeeze a bit of lemon juice over the top before serving.
