  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked rice or pasta (for serving)

Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. In a small bowl, mix Cajun seasoning with a pinch of salt and pepper. Rub this mixture over the chicken breasts evenly.
  3. Let the seasoned chicken sit for 15-20 minutes at room temperature.
  4. In a large skillet, heat olive oil and butter over medium-high heat.
  5. Add the chicken breasts to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through.
  6. Remove the chicken from the skillet and cover with aluminum foil to keep warm.
  7. In the same skillet, add diced onion, red bell pepper, and green bell pepper. Sauté for about 5 minutes until softened.
  8. Add minced garlic and cook for an additional minute.
  9. Pour in chicken broth, scraping the bottom of the skillet to deglaze. Bring to a simmer.
  10. Stir in heavy cream, diced tomatoes, dried thyme, and smoked paprika. Simmer for 5-10 minutes until the sauce thickens.
  11. Return the cooked chicken to the skillet, spooning sauce over it.
  12. Let the chicken simmer in the sauce for an additional 5 minutes.
  13. Taste the sauce and adjust seasoning with salt and pepper if needed.
  14. Serve a scoop of cooked rice or pasta on each plate.
  15. Top with a chicken breast and spoon over the creamy Cajun sauce.
