- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Cooked rice or pasta (for serving)
Instructions
- Pat the chicken breasts dry with paper towels.
- In a small bowl, mix Cajun seasoning with a pinch of salt and pepper. Rub this mixture over the chicken breasts evenly.
- Let the seasoned chicken sit for 15-20 minutes at room temperature.
- In a large skillet, heat olive oil and butter over medium-high heat.
- Add the chicken breasts to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and cover with aluminum foil to keep warm.
- In the same skillet, add diced onion, red bell pepper, and green bell pepper. Sauté for about 5 minutes until softened.
- Add minced garlic and cook for an additional minute.
- Pour in chicken broth, scraping the bottom of the skillet to deglaze. Bring to a simmer.
- Stir in heavy cream, diced tomatoes, dried thyme, and smoked paprika. Simmer for 5-10 minutes until the sauce thickens.
- Return the cooked chicken to the skillet, spooning sauce over it.
- Let the chicken simmer in the sauce for an additional 5 minutes.
- Taste the sauce and adjust seasoning with salt and pepper if needed.
- Serve a scoop of cooked rice or pasta on each plate.
- Top with a chicken breast and spoon over the creamy Cajun sauce.
- Garnish with freshly chopped parsley. Enjoy with a side salad or crusty bread!
