- 1 medium onion, thinly sliced
- 1 medium green bell pepper, thinly sliced
- 1 cup shredded mozzarella cheese
- 4 hoagie rolls or sub sandwich rolls

Instructions
- Trim excess fat from the chicken breasts and cut them into small, bite-sized pieces.
- In a large bowl, combine chicken pieces with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until well coated.
- Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through.
- Pour in the buffalo sauce and stir to coat the chicken. Let it simmer for an additional 2-3 minutes.
- Push the chicken to one side of the skillet and add sliced onions and bell peppers to the other side. Add more olive oil if needed.
- Sauté the vegetables for 5-7 minutes until tender and slightly caramelized. Stir occasionally.
- Mix the cooked vegetables with the chicken and buffalo sauce.
- Preheat the oven to 350°F (175°C). Slice each hoagie roll lengthwise to create a pocket.
- Place the rolls on a baking sheet and toast them in the oven for about 5 minutes if desired.
- Spoon the buffalo chicken and vegetable mixture into each hoagie roll and sprinkle with shredded mozzarella cheese.
- Bake the filled hoagie rolls in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
- For a browned cheese topping, switch to broil for the last 2-3 minutes, watching closely to prevent burning.
- Let the cheesesteaks cool for a minute before serving.
- Drizzle with blue cheese dressing if desired and garnish with chopped parsley.
