  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

  • 1/2 cup buffalo sauce (adjust to taste)
  • 1 medium onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 4 hoagie rolls or sub sandwich rolls
  • Optional: blue cheese dressing for drizzling
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Trim excess fat from the chicken breasts and cut them into small, bite-sized pieces.
  2. In a large bowl, combine chicken pieces with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until well coated.
  3. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through.
  4. Pour in the buffalo sauce and stir to coat the chicken. Let it simmer for an additional 2-3 minutes.
  5. Push the chicken to one side of the skillet and add sliced onions and bell peppers to the other side. Add more olive oil if needed.
  6. Sauté the vegetables for 5-7 minutes until tender and slightly caramelized. Stir occasionally.
  7. Mix the cooked vegetables with the chicken and buffalo sauce.
  8. Preheat the oven to 350°F (175°C). Slice each hoagie roll lengthwise to create a pocket.
  9. Place the rolls on a baking sheet and toast them in the oven for about 5 minutes if desired.
  10. Spoon the buffalo chicken and vegetable mixture into each hoagie roll and sprinkle with shredded mozzarella cheese.
  11. Bake the filled hoagie rolls in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  12. For a browned cheese topping, switch to broil for the last 2-3 minutes, watching closely to prevent burning.
  13. Let the cheesesteaks cool for a minute before serving.
  14. Drizzle with blue cheese dressing if desired and garnish with chopped parsley.
  15. Serve hot with your favorite sides.
