- 1/4 cup extra virgin olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1/2 teaspoon red pepper flakes (optional for a kick)
- 1/4 cup grated Parmesan cheese (optional for extra flavor)
Instructions
- In a large mixing bowl, combine the diced cherry tomatoes and chopped basil leaves.
- Add the minced garlic to the bowl.
- Pour in the balsamic vinegar and extra virgin olive oil.
- Season the mixture with salt and pepper to taste.
- If desired, sprinkle in the red pepper flakes for a bit of heat.
- Gently fold in the mozzarella cheese.
- If using, add the Parmesan cheese and mix until well combined.
- Preheat your oven to 400°F (200°C).
- Arrange the sliced baguette or Italian bread on a baking sheet in a single layer.
- Drizzle a little olive oil over the bread slices.
- Sprinkle a pinch of salt over the bread.
- Bake for about 8-10 minutes, or until the bread is golden brown and crispy.
- Remove the bread from the oven and let it cool slightly.
- In a serving dish or large bowl, spoon the bruschetta mixture into the center.
- Arrange the toasted bread slices around the bruschetta mixture.
- Garnish with leftover basil leaves if desired.
- Drizzle a little more balsamic vinegar over the top for added flavor.
