Instructions
- In a large mixing bowl, combine the dry ingredients: flour, brown sugar, baking powder, baking soda, and salt. Whisk until well mixed.
- In another bowl, mix the wet ingredients: buttermilk, egg, mashed bananas, melted butter, and vanilla extract. Blend until smooth.
- Pour the wet mixture into the dry ingredients and gently fold together with a spatula. Be careful not to overmix; a few lumps are okay.
- Heat a non-stick skillet or griddle over medium heat and add a teaspoon of butter or oil.
- Use a 1/4 cup measuring cup to pour the batter onto the skillet, cooking 2-3 pancakes at a time.
- Cook for 2-3 minutes until bubbles form on the surface and edges look set. Flip and cook for another 1-2 minutes until golden brown.
- Keep cooked pancakes warm in a preheated oven at 200°F (93°C) while finishing the remaining batter.
- Stack 2-3 pancakes on a plate.
- Drizzle warm maple syrup over the top.
- Optionally, add sliced bananas and chopped nuts for extra flavor and presentation.
