Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk (or milk with 1 tablespoon vinegar added)
  • 1 large egg
  • 2 ripe bananas, mashed
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking
  • Maple syrup, for serving
  • Optional: sliced bananas and chopped nuts for topping

Instructions

  1. In a large mixing bowl, combine the dry ingredients: flour, brown sugar, baking powder, baking soda, and salt. Whisk until well mixed.
  2. In another bowl, mix the wet ingredients: buttermilk, egg, mashed bananas, melted butter, and vanilla extract. Blend until smooth.
  3. Pour the wet mixture into the dry ingredients and gently fold together with a spatula. Be careful not to overmix; a few lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat and add a teaspoon of butter or oil.
  5. Use a 1/4 cup measuring cup to pour the batter onto the skillet, cooking 2-3 pancakes at a time.
  6. Cook for 2-3 minutes until bubbles form on the surface and edges look set. Flip and cook for another 1-2 minutes until golden brown.
  7. Keep cooked pancakes warm in a preheated oven at 200°F (93°C) while finishing the remaining batter.
  8. Stack 2-3 pancakes on a plate.
  9. Drizzle warm maple syrup over the top.
  10. Optionally, add sliced bananas and chopped nuts for extra flavor and presentation.

Notes

  • Ensure not to overmix the batter to keep the pancakes fluffy.
  • Adjust the cooking time based on your stove and skillet; keep an eye on the pancakes to prevent burning.
  • Feel free to customize toppings based on your preference.
