Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
- Add the elbow macaroni and cook according to package instructions until al dente (7-8 minutes). Stir occasionally.
- Drain the macaroni in a colander and rinse briefly with cold water to stop the cooking process.
- In a large saucepan, melt the butter over medium heat.
- Add the flour and whisk continuously for about 2 minutes to create a roux.
- Gradually pour in the milk while whisking to avoid lumps. Cook until thickened (5-7 minutes).
- Reduce heat to low and stir in the cream cheese until melted.
- Add the shredded cheddar and mozzarella cheese, stirring until smooth. Reserve some cheese for topping if desired.
- Stir in Dijon mustard, garlic powder, onion powder, smoked paprika, and season with salt and pepper to taste.
- In a large mixing bowl, combine the cooked macaroni and shredded brisket.
- Pour the cheese sauce over the mixture and gently fold until evenly coated.
- Preheat the oven to 350°F (175°C) and grease a large baking dish.
- Transfer the mac and cheese mixture to the baking dish, spreading it evenly. Top with reserved cheese if using.
- For a crunchy topping, sprinkle breadcrumbs over the top.
- Bake for 25-30 minutes, or until the top is golden brown and bubbly. Check around the 20-minute mark.
- Let the dish cool for 5-10 minutes before serving.
