  • 3/4 cup Light Brown Sugar, packed
  • 2 Large Eggs, at room temperature
  • 1 tsp Vanilla Extract
  • 1/4 tsp Peppermint Extract (optional)
  • 1 cup White Chocolate Chips
  • 1 cup Milk Chocolate Chips or Semi-Sweet Chocolate Chips
  • Festive Sprinkles/Edible Glitter (optional)
  • Crushed Peppermint Candies/Candy Canes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set this aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream together the softened unsalted butter, granulated sugar, and light brown sugar on medium speed until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and the optional peppermint extract until just combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  6. Remove the bowl from the mixer and gently fold in the white chocolate chips, milk chocolate chips, and any optional crushed peppermint candies or candy canes.
  7. Drop rounded tablespoons of dough onto your prepared baking sheets, leaving about 2 inches between each cookie. If using extra white chocolate chips, press a few onto the top of each dough ball.
  8. Bake for 9-12 minutes, or until the edges are golden brown and the centers are still slightly soft.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
