- Strain the infused cream over the chopped chocolate, pressing to extract liquid. Let sit undisturbed for 5 minutes.
- Starting from the center, gently stir the chocolate and cream with a whisk or spatula until a smooth, glossy ganache forms. Ensure all chocolate is melted and emulsified.
- Stir in unsalted butter and 1-2 teaspoons of fresh orange juice until fully incorporated and silky. Adjust orange flavor if desired.
- Cover the bowl with plastic wrap, pressing it directly onto the ganache. Refrigerate for at least 2-3 hours (preferably overnight) until firm enough to scoop and roll, like soft ice cream.
- Prepare coatings on shallow plates. Using a small cookie scoop, portion chilled ganache. Quickly roll each portion into a smooth ball between your palms. Work efficiently.
- Immediately roll each truffle in your chosen coating until evenly covered. Place on a parchment-lined baking sheet.
