  • Yukon Gold or small red new potatoes (cut into ½-inch cubes)
  • 46 cloves of fresh garlic (minced)
  • Unsalted butter
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme (finely chopped)
  • High smoke point oil (canola, grapeseed, or avocado oil)
  • Salt
  • Freshly ground black pepper
  • Smoked paprika (optional)
  • Onion powder (optional)

Instructions

  1. Wash the potatoes thoroughly and cut them into roughly ½-inch cubes. Soak the cubed potatoes in a bowl of cold water for about 15-20 minutes to remove excess starch.
  2. Drain the potatoes completely and pat them bone dry with paper towels. Toss the dry potatoes with 2-3 tablespoons of high smoke point oil, a generous pinch of salt, and freshly ground black pepper.
  3. Heat a large, heavy-bottomed skillet over medium-high heat. Add the seasoned potatoes in a single layer and cook undisturbed for 5-7 minutes until golden-brown. Flip and continue cooking for another 15-20 minutes until all sides are crispy and tender.
  4. Transfer the crispy potatoes to a plate lined with paper towels to drain excess oil and set aside.
  5. Pat the steak cubes dry with paper towels and season generously with salt and freshly ground black pepper.
  6. Wipe out the skillet and return it to high heat. Add another tablespoon of high smoke point oil to the pan. Once the oil is shimmering, add the seasoned steak bites in a single layer and sear for 1-2 minutes per side until a crust forms.
  7. Reduce the heat to medium-low. Add the unsalted butter, minced garlic, fresh rosemary, and fresh thyme to the pan. Spoon the melted garlic butter mixture over the steak bites for 1-2 minutes.
  8. Remove the skillet from heat and either stir the crispy potatoes back into the pan with the steak bites or serve the steak bites immediately over the crispy potatoes.
  9. Garnish with fresh chopped parsley if desired and serve immediately.
