  • 4 large flour tortillas
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup corn (canned or frozen, thawed)
  • 1/4 cup fresh cilantro, chopped (optional)
  • 1 tablespoon olive oil or butter (for cooking)
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the shredded chicken and BBQ sauce, ensuring the chicken is well-coated. Adjust the amount of BBQ sauce to your taste. Add the sliced red onion and corn, mixing everything together. If desired, add chopped cilantro and season with salt and pepper.
  2. Lay out the flour tortillas on a clean surface. Warm them slightly in the microwave for 10-15 seconds to make them pliable.
  3. On one half of each tortilla, sprinkle a generous amount of shredded cheddar and mozzarella cheese. Spoon a portion of the BBQ chicken mixture onto the cheese-covered half, about 1/2 to 3/4 cup of filling per quesadilla. Fold the other half of the tortilla over the filling and press down gently to seal.
  4. Heat a large skillet over medium heat and add olive oil or butter. Once melted, place one or two quesadillas in the skillet. Cook for 3-4 minutes on one side until golden brown and crispy. Flip and cook for another 3-4 minutes until the cheese is melted and the tortilla is crispy. Adjust the heat if necessary.
  5. Transfer the cooked quesadilla to a cutting board and let it sit for a minute before slicing into wedges. Repeat with remaining quesadillas, adding more oil or butter as needed. Serve warm with extra BBQ sauce, sour cream, guacamole, or salsa. Garnish with fresh cilantro or jalapeño slices if desired.
