Ingredients
Scale
- 1 box Yellow Cake Mix
- 1 can Sweetened Condensed Milk
- 1/2 cup Unsalted Butter
- 1 cup Light Brown Sugar
- 3–4 Ripe but Firm Bananas, sliced
- 1/4 cup Non-alcoholic Dark Rum Alternative or Rum Extract
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Ground Cinnamon
- 1/4 teaspoon Ground Nutmeg
- 1 container Whipped Topping or Freshly Whipped Cream
- 1/2 cup Chopped Pecans (Optional)
Instructions
- Bake the Yellow Cake: Prepare your yellow cake mix according to the package directions. Pour the batter into a greased 9×13 inch baking pan. Bake as directed until a wooden skewer inserted into the center comes out clean. Let the cake cool in the pan on a wire rack for about 15-20 minutes.
- Poke Away!: Using the handle of a wooden spoon or a round skewer, poke holes all over the surface of the warm cake, about 1-inch apart.
- Infuse with Sweetness: While the cake is still warm, pour the entire can of sweetened condensed milk evenly over the poked cake. Cover the cake loosely with plastic wrap and refrigerate it for at least 1 hour.
- Prepare the Bananas Foster Topping: In a large skillet, melt the unsalted butter over medium heat. Add the light brown sugar, ground cinnamon, and ground nutmeg. Stir until the sugar has dissolved and the mixture is bubbly.
- Add the Flavors: Carefully pour in the non-alcoholic dark rum alternative and vanilla extract. Stir well to combine and let it cook for another minute.
- Sauté the Bananas: Add the sliced bananas to the skillet and gently toss in the warm caramel sauce. Cook for 1-2 minutes until slightly softened but still holding their shape. Remove from heat and let cool to room temperature.
- Assemble the Cake: Once the cake is chilled and the topping is at room temperature, evenly spoon the cooled Bananas Foster topping over the cake.
- Crown with Cream: Spread a generous layer of whipped topping or freshly whipped cream over the Bananas Foster layer.
- Garnish and Chill: If desired, sprinkle the top with chopped pecans. Cover the cake loosely and refrigerate for at least 4 hours or overnight.

Keywords: Ensure bananas are ripe but firm for the best texture. Allow ample chilling time for the flavors to meld and the cake to become moist.
