  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt
  • 1/2 cup buttermilk (or regular milk with a splash of vinegar)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup melted butter
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)
  • Optional: additional cinnamon for sprinkling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and peel the apples using a vegetable peeler.
  3. Core and chop the apples into small, bite-sized pieces (about 1/4-inch cubes).
  4. (Optional) Toss the chopped apples with a sprinkle of cinnamon and a teaspoon of sugar for added flavor.
  5. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt.
  6. In a separate bowl, whisk together the buttermilk, egg, vanilla extract, and melted butter (ensure the butter isn’t too hot).
  7. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula, being careful not to overmix.
  8. Fold in the chopped apples until just combined.
  9. Line a baking sheet with parchment paper or a silicone baking mat.
  10. Drop heaping tablespoons of the batter onto the prepared baking sheet, leaving space between each fritter.
  11. (Optional) Sprinkle a little extra cinnamon on top of each fritter.
  12. Bake in the preheated oven for 15-20 minutes, or until golden brown and a toothpick inserted comes out clean.
  13. In a small bowl, combine the powdered sugar and 1 tablespoon of milk, whisking until smooth. Adjust consistency with more milk if needed.
  14. Let the fritters cool on the baking sheet for about 5 minutes before transferring to a wire rack.
  15. Drizzle the glaze over the warm fritters or dip the tops directly into the glaze for a thicker coating.
  16. Drizzle any leftover glaze over the fritters and sprinkle with extra cinnamon if desired.
  17. Allow the glaze to set for a few minutes before serving.
  18. Serve warm, either on their own or with a side of whipped cream or vanilla ice cream.

Notes

  • For a richer flavor, consider using brown sugar instead of granulated sugar.
